Still have some left over ham? Well I still have recipes for you 😉 This Ham and Cheese Quiche is a crowd pleaser and would make the most perfect day after Christmas brunch. Pair with a bloody mary or mimosa and you're set!

Quiche is so amazing, I mean who can turn down a breakfast pie?! This is a great way to impress your Holiday quests too, because it looks so fancy and possibly complicated, but it's actually pretty simple. The cheese gets so crispy on the top and the inside stays almost the consistency of scrambled eggs, so fluffy and tender. Ham and Cheese Quiche is a great way to use left over Christmas ham, impress your house guests and can even save you some time in the morning.

Start by preparing the pie dough. If you are making your own, do this first. I have a great recipe for pie dough that originally came from Paula Dean. It's really great and turns out every time! Another option is pre-made pie dough, you can find this in the freezer section at your grocery store. So, preheat your oven to 375° and bake JUST the pie dough for ten minutes, then remove from the oven and set aside for now.

Now lets get the filling done. Heat two tablespoons of butter in a skillet over medium heat. Chop half the medium onion and mince the garlic, then add to your heated pan. Saute just until your onion is tender and translucent, remove from heat and allow to cool for about ten minutes. This is important, because if the add hot ingredients right to the egg, it will cook your egg, and you don't wan't this to happen just yet.

In a large bowl, crack six eggs and add heavy cream. Whisk the egg until the mixture is a light yellow color and well combined. Add one cup of chopped ham, one cup shredded cheddar cheese, 1/4 cup of freshly grated parmesan, 1/2 cup frozen spinach, and lastly add the onion and garlic. Whisk all ingredients together until everything is evenly distributed and pour the mixture into the nine inch pie pan that you prepared earlier with pie dough. Sprinkle the top with a little more cheddar and parmesan.  Add the Ham and Cheese Quiche into your 375° oven and bake for 40 - 50 minutes. You will know the quiche is done when the top is crispy and brown, and the pie is no longer jiggly. Once this is fully baked, remove from the oven and let cool for at least ten minutes before slicing. Serve hot.
