Day two of Whoopee Pies! Today we will be baking Chocolate Whoopee Pies, because chocolate is everything. Let's get going on these!

Preheat the oven to 400°, then sift all the dry ingredients together. Your dry ingredients include, flour, salt, baking soda, baking powder, and cocoa. Set this aside for now. In a large bowl attached to your stand mixer, add butter and sugar. Beat this together until fluffy then add eggs, buttermilk and vanilla extract. Beat until completely combined, then slowly add in dry ingredients. Mix until just combined.

Drop heaping tablespoons of dough onto a cookie sheet about 2 inches apart, then bake at 400° for 10-12 minutes. Remove from oven and leave on the cookie sheet for a minute before removing and placing cookies on cooling racks. Cool these completely before filling with buttercream frosting. Either homemade or store bought works, just make sure cookies are completely cooled before frosting so the frosting doesn't melt everywhere.
