If you're looking for a way to seriously jazz up a grilled cheese, look no further! This baby is where it's at. Usually I'm not too big on sandwiches, but this grilled cheese is everything. With bacon, jalapenos, jam and cheese, how could you possibly go wrong? That's right, you can't. Everything about this is absolutely perfect.
Next time you are thinking about making a grilled cheese, take a few extra minutes to thinly slice some jalapenos and fry up some bacon. These additions will make your tummy happy, happy! Promise, it's worth it!
Jalapeno Grilled Cheese

1 lb - Cooked Bacon

White or Wheat Sandwich Bread

Sliced Sharp Cheddar Cheese
-
1 - Thinly Sliced Jalapeno

Jam to spread on sandwiches (any flavor)

Butter to spread on the outside of the bread
Start by cooking the bacon. Sometimes we fry it in a pan, sometimes we cook it in the oven, other times we cook it on the smoker (this adds a great smokey flavor and extra crunch to the bacon). Once the bacon is done, heat your pan and start buttering one side of each bread slice. To build the grilled cheese, spread jam on the side of the bread opposite the butter and place cheese slice on the side with the jam. Now place slices of jalapeno on the cheese slice, add the bacon and put the sandwich together.
Your pan should be hot at this point and ready for your sandwiches. If you are cooking on the stove, heat to medium high, if you are using a griddle, heat to 350°. Put the sandwiches in the pan and fry until the sandwich is golden brown and the cheese is nice and melty. Cut the sandwich in half or eat whole, this part is up to you! I usually serve regular grilled cheese with tomato basil soup, but this grilled cheese I tend to serve with chicken noodle. Not sure why, but in my opinion, it pairs better.
